Lemony Cabbage-Avocado Slaw

This is a homerun side dish in our house. Delicious, quick to assemble, colorful it checks all the boxes. It is a great paired with burgers or veggie burgers, jerk or bbq chicken, or paired with other salads for a veggie meal.

Ingredients:

8 ingredients ~ 15 min to make

6 c finely shredded purple or green cabbage

1 small red, orange, yellow pepper chopped

1 ripe avocado, diced

2 T finely chopped red onion

1 T lemon juice

1/4 c shelled hemp seeds (we prefer sunflower seeds)

3 T cilantro leaves

1/4 t salt


 

Directions:

Toss all ingredients together in a large bowl, until avocado is creamy throughout.


Notes:

Try 3c green 3c red cabbage

Add shredded carrots

Omit onion or pepper for a more mild taste

Use a mandolin for finely shredded cabbage or buy preshredded cabbage to save time.
