While they do have a higher fat content - this translates to more moisture and more flavor. Thighs are higher in iron, affordable and sold boneless - so very easy to add to soups and stews. On the flip side chicken breasts offer a lower fat content, and slightly higher protein content. Typically you can use thighs or breasts for most recipes. Some ideas for chicken breasts; grilled, on salads, sandwiches, in soups or stews. Chicken thighs taste great in tacos/enchilladas, in soups or stews, with jerk or bbq sauce.
