Bone Broth - why all the hype?
Have you heard of bone broth? Wondering if you should give it a try? During these cold dark days of winter a cup of warm broth is the perfect morning hot drink, snack, treat, warm-up, post workout fuel.
What is Bone Broth? Bone broth is a clear protein rich liquid obtained by simmering meaty joints and bones in water.

How to make Bone Broth - I was intimidated to make bone broth for a while but it is super simple and makes your house smell delicious.
Ingredients:
1 chicken carcass (as noted in picture I leave some meat and skin on the carcass to enhance flavor) or 2-4 animal bones; beef, turkey, pork, bison, lamb
8-10 cups water
1/2-1 onion cut into quarters or eighths
3-4 stalks of celery (can also add carrots or other veggies you have on hand)
handful of peppercorn
1 tsp salt
1-2 tbs apple cider vinegar or lemon juice (help draw the minerals out of the bones)
3-4 springs thyme and/or rosemary
Place all ingredients in a crock pot and cook for 12-24 hours. The longer it cooks the better it tastes and more nutritious it becomes. Strain liquid and discard solids and store in fridge for up to 5 days or place in small containers and freeze.
