Apple Chia Cinnamon Steel Cut Oats

Ingredients

  • 1 cup Steel Cut Oats

  • 3 cups water

  • 1-2 apples chopped (we prefer Fuji or Honeycrisp)

  • 1-2 t cinnamon

  • 1 T maple syrup

  • 1 T chia seeds

  • 1 t vanilla

  • pinch of salt

Directions

Add 3 cups of water to pot and bring to boil. When water is boiling add oats, apples, cinnamon, maple syrup, chia seeds, salt and vanilla. Stir to incorporate and keep chia seeds from clumping. Cook 20-30 min stirring every 5-10 minutes.

Notes

Top with pecans, walnuts, peanut butter or nuts of your choice.

Keeps in the fridge for 2-3 days.

*Speed trick - The night before add steel cut oats to the pot and add 3 cups near boiling water. Cover overnight and let the oats “pre-soften”. This will reduce cooking time to 5-10 minutes depending on preferred texture.
