Elevate your breakfast game…

Are you sick of eggs, a smoothie, a bowl of granola or whatever your go-to breakfast is? Do you even eat breakfast or just drink coffee and wait for hunger to hit at 10 or 11 am? Breakfast is arguable the most important meal of the deal. Breaking the “fast” and providing your body with nutrients to fuel you through the day. This pumpkin porridge is delicious, soothing, and filling. Pumpkin is high in Vitamin A supporting our eyes, skin, healing ; Vitamin C which helps with immunity. Pumpkin is gut soothing and high in antioxidants which help with cell repair. Easy to make the night before and just heat up or eat cold in the am. I like to top with pomegranates, seeds, coconut, nuts and apples.

Pumpkin Porridge Breakfast Bowl from the Realistic Holistic

Ingredients

  • 1.5 c pumpkin (1 can)

  • 1 banana mashed

  • 1/4 c coconut flour ( or almond or oat)

  • 1/4 c collagen powder

  • 2/3 c shredded coconut

  • 2/3 c water

  • 1 c coconut milk (we prefer full fat)

  • 1/8 tsp sea salt

  • 2 tsp cinnamon

  • 1 tsp ground ginger

  • 1/8 tsp ground cloves ( can also substitute above 3 for 1-2 tsp pumpkin pie spice depending on your taste preference)

Directions:

  1. Combine all ingredients in a medium saucepan over low heat

  2. Bring to a simmer, stirring consistently until the consistency of oatmeal is reached

  3. Spoon into bowls and top with whatever makes you happy! ( Pomograntes, seeds, coconut, hemp hearts, nuts, apples, bananas)
