Fruit - its nature’s candy….

Summer is an incredible time to take advantage of the bountiful and delicious array of fresh fruits available.

  • Stone fruits such as apricots, nectarines, and plums are delicious on their own, on a salad, bowl of yogurt or granola.

  • Berries are high in antioxidants and make a delicious snack or dessert. Top with homemade Coconut Cream or Whipped Cream for a simple, delicious and nutrient rich dessert.

  • Grapes and watermelon provide an excellent source of hydration on hot days. Try freezing grapes for an extra cool snack.

  • Starfruit, gooseberries/golden berries, dragonfruit, coconut are less common fruits that are fun to try.



Whipped Coconut Cream

Ingredients:

  • 1 can full fat coconut cream (place in fridge at least one hour before preparation along with bowl you plan to make it in)

  • 1 t vanilla extract

  • 1/4 c raw granulated sugar

Steps:

  • Place coconut cream in chilled bowl and begin to mix on low speed with hand or stand mixer. Add vanilla and continue to mix on medium speed. Slowly add sugar and continue mixing until it starts to thicken. When desired consistency is achieved remove mixer. Serve immediately over berries or chill covered until ready to serve.
